| Individual Pound Cakes with Lemon Butter Icing |

| Ingredients |

1 cup sugar 1 cup Clover MooiRiver Butter, softened 1 cup beaten eggs (4 eggs) 1 cup self raising flour zest of 1 lemon
Ingredients for the Icing
100g Clover Springbok Butter (unsalted) 400g icing sugar 2 tsp hot water juice of 1/2 lemon 1/2 tsp poppy seeds |
| Preparation method |
- Combine sugar and butter in mixing bowl and mix until soft and creamy
- Add eggs and mix well. Stir in flour
- Spoon into 12 greased muffin pans and bake at 180˚C for 15 minutes
- Let cool and spread with icing
Icing Preparation
- Combine butter and icing sugar in mixing bowl and mix
- Add water and mix until soft
- Add lemon juice and mix well
- Stir in poppy seeds
