Individual Pound Cakes with Lemon Butter Icing

Individual Pound Cakes

Serves: 4 portions

Ingredients

1 cup sugar
1 cup Clover MooiRiver Butter, softened
1 cup beaten eggs (4 eggs)
1 cup self raising flour
zest of 1 lemon

Ingredients for the Icing

100g Clover Springbok Butter (unsalted)
400g icing sugar
2 tsp hot water
juice of 1/2 lemon
1/2 tsp poppy seeds

Preparation method
  • Combine sugar and butter in mixing bowl and mix until soft and creamy
  • Add eggs and mix well. Stir in flour
  • Spoon into 12 greased muffin pans and bake at 180˚C for 15 minutes
  • Let cool and spread with icing

Icing Preparation

  • Combine butter and icing sugar in mixing bowl and mix
  • Add water and mix until soft
  • Add lemon juice and mix well
  • Stir in poppy seeds
