Food quality is increasingly a subject of concern. The challenge the catering and hospitality industries face today, is to find ways to match consumer demands and expectations for good quality food with corresponding food supplies at affordable rates.

“Cream is one of the ingredients that can either make or break a dish. Clover’s extensive range of creams has been developed to ensure optimal performance of the end product. When dairy cream is used in sauce preparations, it is important to use a good quality cream that is suited for high temperature conditions. The heat treatment employed by Clover during the processing of cream will reduce the milk proteins’ tendency to aggregate when exposed to high heat. The end product remains stable when heated at high temperatures - making it perfectly suited for use in sauces and baking.
Clover’s modern production methods put consumers first. To ensure consumers only get the best quality cream, it is pasteurised and standardised (butterfat levels are changed to make sure that all the cream has the same fat content) while care is taken during processing and filling not to damage the delicate fat globules thereby ensuring optimal product functionality (especially whipping). Due to the processing and filling technology used, this pure, natural product also has an extended shelf life, which gives consumers more time to enjoy it,” says Galatis.
