120g ginger biscuits, crumbed
2 tbsps Clover Butro Butter Spread, melted
500g butternut, cooked and pureed
250g Clover Creamed Smooth Plain Cottage Cheese
2 eggs
⅓ cup castor sugar
½ tbsp ground ginger
½ tbsp ground cinnamon
1 tsp vanilla essence

• Mix biscuit crumbs with butter and press down in bottom of lined spring form pan
• Combine butternut and cottage cheese in mixing bowl, mix well
• Beat eggs with sugar until pale and foamy
• Stir into cottage cheese mixture
• Season with ginger, cinnamon and vanilla
• Spoon into springformpan and bake in oven at 180ºC for 40 minutes or until done
