Grape Salad with Marbled Pistachio Cream

Grape Salad with Marbled Pistachio Cream
Ingredients

500ml Clover Fresh Cream
½ cup fresh or frozen mixed berries
4 tsps castor sugar
2 cups green grapes
2 cups black grapes
6 phyllo baskets, meringue nests or dessert bowls
½ cup roasted pistachios, chopped

Preparation method
  • Whip cream with 2 tsp castor sugar until soft peaks form
  • Puree berries with rest of sugar
  • Stir gently into cream to create marbled effect
  • Spoon grapes into baskets, nests or dessert bowls
  • Top with cream
  • Sprinkle with nuts
