| Twice Grilled Mushroom and Cheese Burger |

| Ingredients |

6 large brown mushrooms, stems removed 1 aubergine, cut into thin slices 3 Italian tomatoes, cut into slices 1cup Clover Cheddar or Gouda, grated 6tbsps red pesto 6 pannini freshly ground black pepper |
| Preparation method |
- Heat griddle pan and grill tomatoes and aubergines, put aside
- Grill mushrooms stem side down first
- Turn mushrooms over and cover with grated cheese
- Remove from heat when cooked
- Cut pannini open and spread with pesto
- Place slices of aubergine on bottom half, top with cooked mushroom and tomato slices
- Season with pepper and top with 2nd half of pannini
- Return to pan and grill until brown
- Serve with Clover Krush Apple Juice
