Banana Loaf

These are the recipes the Clover Mamas Afrika tried and tested at the Beginners Cooking & Baking course.

Ingredients

125g Clover Mooi River Salted Butter
150ml sugar (120g)
2 ex-large eggs
250ml banana pulp (approx. 3 bananas) (192g)
15ml lemon juice
250ml Nutty Wheat (150g)
250ml cake flour (140g)
2ml salt
5ml bicarbonate of soda
30ml Clover Full Cream fresh milk

Makes: One Loaf


 
Preparation method
  1. Cream butter and sugar and beat in eggs one at a time
  2. Add pulp and lemon juice
  3. Sift dry ingredients and fold into the creamed mixture alternately with the milk
  4. Turn into a lined, greased 23cm loaf tin
  5. Bake at 180°C for 60 minutes

Sweet Bran Loaf

Makes: One Loaf

Ingredients

300ml digestive bran (36g)
275ml Clover Full Cream fresh milk
500ml cake flour (280g)
10ml baking powder
2ml salt
5ml mixed spice
1 ex-large egg
62ml sunflower oil
250ml soft brown sugar (200g)
250ml raisins (150g) (optional)


 
Preparation method
  1. Mix bran and milk together and allow to stand for five minutes.
  2. Combine rest of ingredients and add bran and milk to mixture.
  3. Spoon into a greased 23cm loaf tin and bake at 180°C for +60 minutes or until skewer comes out clean when inserted

Corn Bread

Makes: One Loaf

Ingredients

130ml Clover Mooi River Salted Butter, melted (125g)
100ml sugar
3 eggs
500ml cake flour (280g)
15ml baking powder
3ml salt
125ml maize meal
1x410g can creamed sweet corn
125ml Clover Full Cream fresh milk


 
Preparation method
  1. Preheat oven to 180°C
  2. Cream butter and sugar together. Add eggs one at a time, beating constantly until mixture is light and fluffy
  3. Sift flour, baking powder and salt together. Add dry mixture to creamed butter. Add maize meal, sweet corn and milk. Mix well and spoon into a greased 23 cm loaf tin
  4. Bake 50 - 55 minutes or until skewer comes out clean when inserted into the centre of loaf. Turn out onto a wire rack and allow to cool . 

Chakalaka Bread

Makes: 1 Loaf

Ingredients

875ml cake flour (490g)
20ml baking powder
125ml Chakalaka chutney
500ml Clover Danone Inkomazi
125ml grated Clover Cheddar cheese (50g)
pinch of cayenne pepper


 
Preparation method
  1. Sift flour and baking powder together to blend ingredients well. Add chakalaka, Inkomazi and half of the cheese together and mix until ingredients are blended
  2. Spoon into a lined and greased 23 cm loaf tin and sprinkle remaining cheese and cayenne pepper on top
  3. Bake in a preheated oven at 180°C for 1 hour or until a skewer comes out clean when inserted in the middle. Serve with butter

Chakalaka Bread Variations

Onion loaf

Heat 12 ml sunflower oil in a heavy-based frying pan. Add 1 chopped onion and sauté until onion is translucent. Allow the onion to cool to room temperature and add with the chakalaka, Inkomazi and cheese to the dry ingredients.


 

Spicy loaf

Add 1 chopped and seeded red chilli to the dry ingredients.
