To Serve: 500ml uncooked parboiled rice OR 500ml uncooked maize meal
Preparation method
Heat the oil in a heavy-based saucepan. Add the beef and fry until golden brown in colour. Remove meat from pan with a slotted spoon. Add the onion to the saucepan and sauté until onion is translucent.
Add the salt, pepper, cake flour and beef stock to the onion and mix through. Add the meat and mix through to cover. Reduce heat and simmer until meat is soft.
Meanwhile, cook rice or maize meal according to instructions on pack. Keep warm.
Add carrots, green beans, and potatoes to the stew when the meat is just tender. Mix through and simmer covered for another 20 - 30 minutes, or until vegetables are cooked through and meat soft
Curried Beef Stew
Ingredients to serve 3
1 x basic stew recipe 15ml mild curry powder 1 x 115g can tomato paste 3 carrots, peeled and sliced
Ingredients to serve 8
2 x basic stew recipe 30ml mild curry powder 2 x 115g can tomato paste 6 carrots, peeled and sliced
Add tomatoes and sugar to onion before adding meat and remaining ingredients. Mix through and cover. Simmer until meat is tender. Add more sugar if needed.
Add sugar beans to stew and simmer for 5 minutes. (* See cooking beans here)
