Basic Stew Recipe

These are the recipes the Clover Mamas Afrika tried and tested at the Beginners Cooking & Baking course.

Ingredients to serve 3

750g stewing beef, sawn into 25mm portions
15ml sunflower oil
1 onion, chopped
7ml salt
pepper to taste
15ml cake flour
250ml beef stock

To Serve:
250 ml uncooked parboiled rice OR
250ml uncooked maize meal

Ingredients to serve 8

2kg de-boned stewing beef
30ml sunflower oil
2 onions, chopped
15ml salt
pepper to taste
30ml cake flour
500ml beef stock

To Serve:
500ml uncooked parboiled rice OR
500ml uncooked maize meal


 
Preparation method
  1. Heat the oil in a heavy-based saucepan. Add the beef and fry until golden brown in colour. Remove meat from pan with a slotted spoon. Add the onion to the saucepan and sauté until onion is translucent.
  2. Add the salt, pepper, cake flour and beef stock to the onion and mix through. Add the meat and mix through to cover. Reduce heat and simmer until meat is soft.
  3. Meanwhile, cook rice or maize meal according to instructions on pack. Keep warm.
  4. Serve stew immediately with cooked rice or maize

Beef and Vegetable Stew
Ingredients to serve 3

1 x basic stew recipe
6 carrots, cut into thick slices
200g green beans, stems removed
3 medium potatoes, peeled and cut into bite-size pieces

Ingredients to serve 8

2 x basic stew recipe
12 carrots, cut into thick slices
500g green beans, stems removed
6 medium potatoes, peeled and cut into bite-size pieces


 
Preparation method
  1. Follow basic stew recipe.
  2. Add carrots, green beans, and potatoes to the stew when the meat is just tender. Mix through and simmer covered for another 20 - 30 minutes, or until vegetables are cooked through and meat soft

Curried Beef Stew
Ingredients to serve 3

1 x basic stew recipe
15ml mild curry powder
1 x 115g can tomato paste
3 carrots, peeled and sliced

Ingredients to serve 8

2 x basic stew recipe
30ml mild curry powder
2 x 115g can tomato paste
6 carrots, peeled and sliced


 
Preparation method
  1. Follow basic stew recipe.
  2. Fry curry powder with the onion. Fry for 1 minute, add tomato paste to onion and mix through.
  3. Add the meat and remaining ingredients and simmer covered until meat is just tender.
  4. Add the carrots and cook for a further 20 - 25 minutes or until carrots are cooked and meat is soft 

Beef and Tomato Stew with Sugar Beans
Ingredients to serve 3

1 x basic stew recipe
5 ripe tomatoes, chopped
125ml sugar
500ml cooked sugar beans

Ingredients to serve 8

2 x basic stew recipe
10 ripe tomatoes, chopped
250ml sugar
2 x 500 ml cooked sugar beans


 
 
Preparation method
  1. Follow basic stew recipe.
  2. Add tomatoes and sugar to onion before adding meat and remaining ingredients. Mix through and cover. Simmer until meat is tender. Add more sugar if needed.
