Ginger & Peach Tapiocas

Ingredients

3 fresh peaches
1 cup tapioca
1 liter Clover Fresh Milk
1/3 cup sugar
piece of fresh ginger
pinch of cinnamon
2 eggs, beaten

Preparation method
  • Cut peaches in slices and arrange on bottom of 6 ramekins
  • Heat tapioca, milk, ginger, cinnamon and sugar together
  • Simmer until tapioca is cooked, stir regularly
  • Remove from heat, let cool for 10 minutes
  • Remove ginger and stir eggs into tapioca
  • Pour over peaches
  • Place ramekins in deep oven dish
  • Pour water in oven dish to reach halfway up ramekins
  • Bake in oven at 180ºC for about 25 minutes
  • Serve warm or at room temperature
