Fried Wild Rice

This recipe appeared on Week 12 of Nataniël's Festive Kitchen 2007 and the theme was: Fast Feasts (Featuring: Clover Butro)

Ingredients

2 cups cooked brown and wild rice mixture
2 tbsps Clover Butro Butter Spread
250g brown mushrooms, sliced
1 egg, whisked
1 cup garden peas
1 tbsp soy sauce
freshly ground black pepper
sweet chilli sauce
25g spring onions, chopped 

Preparation method
  • Heat 1 tbsp Butro in a pan or wok and fry mushrooms
  • Remove from pan
  • Fry egg in pan until just starting to set, remove from pan
  • Heat remaining Butro in pan
  • Add rice, garden peas, mushrooms and soy sauce and stir until heated
  • Remove from heat and stir in egg
  • Spoon in bowls and season with black pepper
  • Top with chilli sauce and garnish with spring onions
