Ingredients
8 chicken breast fillets 2 cloves garlic, peeled 250ml fresh coriander leaves 3 spring onions, chopped 5ml lemon rind, finely grated 10ml fresh ginger, finely grated 10ml soy sauce 200ml Tropika Orange 800g sweet potatoes, cut into 8mm slices 50ml Clover Salted Butter, melted salt and freshly ground black pepper to taste 100g Clover Feta Pepper flavour, crumbed
Preparation method
Cut each chicken breast in half.
Blend the garlic, coriander, spring onion, lemon rind, ginger, soy sauce and Tropika Orange for 2 minutes until combined.
Coat the chicken in the mixture and thread onto wooden skewers.
Brush the sweet potatoes with the butter, season to taste and grill over moderate coals until tender. Grill chicken for 4 minutes on each side, or until done.
Serve the chicken skewers with sweet potato sprinkled with feta cheese.
Tip: Soak the skewers in hot water for 30 minutes. This prevents the skewers from burning during the cooking process.
