| Preparation method |
- Preheat oven to 190°C.
- Sift the flour, salt, bicarbonate of soda and baking powder together. Add the chocolate and mix through.
- Beat the butter, sugar and coffee together until smooth. Add the eggs and beat well, add the sour cream and vanilla and beat until mixed through.
- Add the dry ingredients to the butter mixture and lightly mix through. Mixture can still be lumpy.
- Spoon equal amounts of batter in a greased muffin pan and bake for 20 - 25 minutes or until golden brown in colour and a skewer comes out clean when inserted.
- Allow muffins to cool in pan before turning out onto a wire rack. Serve plain or with butter.
Makes 12 - 18 muffins, depending on size. |
