Clover Cappucino Muffin

 

Ingredients

500 ml cake flour (240g)
1 ml salt
1 ml bicarbonate of soda
5 ml baking powder
30 ml instant coffee granules
100 ml chocolate chips (100g)
125ml Clover Mooi River Salted Butter (115g)
175 ml sugar (140g)
2 eggs
250 ml Clover Sour Cream
5 ml vanilla essence

Clover Mooi River Salted Butter

Preparation method
  • Preheat oven to 190°C.
  • Sift the flour, salt, bicarbonate of soda and baking powder together. Add the chocolate and mix through.
  • Beat the butter, sugar and coffee together until smooth. Add the eggs and beat well, add the sour cream and vanilla and beat until mixed through.
  • Add the dry ingredients to the butter mixture and lightly mix through. Mixture can still be lumpy.
  • Spoon equal amounts of batter in a greased muffin pan and bake for 20 - 25 minutes or until golden brown in colour and a skewer comes out clean when inserted.
  • Allow muffins to cool in pan before turning out onto a wire rack. Serve plain or with butter.

Makes 12 - 18 muffins, depending on size.
