Double Chocolate Muffin

 

Ingredients

310 ml cake flour (175g)
60 ml cocoa (25g)
10 ml baking powder
125 ml soft brown sugar (100g)
110ml Clover Mooi River Salted Butter, melted (100g)
2 eggs
125 ml Clover Fresh Full Cream Milk
250 ml chocolate chips or roughly chopped dark chocolate (200g)

Preparation method
  • Preheat oven to 190°C.
  • Sift the flour, cocoa and baking powder together. Add sugar and chocolate and mix through.
  • Beat butter, eggs and milk until mixed. Make a hollow in centre of dry ingredients and gradually add the liquid. Lightly mix liquid through, do not over mix, mixture can still be lumpy.
  • Spoon into a greased muffin pan and bake for 20 - 25 minutes or until a skewer comes out clean when inserted
  • Serve warm.

Makes 12 muffins, depending on size.
