| Preparation method |
- Preheat oven to 200°C and grease the hollows of a muffin pan.
- Sift flour, baking powder and salt together.
- Add coconut, sugar and rind and mix well.
- Beat egg, milk, butter and lemon juice together and add to dry ingredients. Mix batter lightly, do not over mix, mixture can still be lumpy.
- Bake for 20-25 minutes. Remove from oven, and allow muffins to cool slightly before turning out on a wire rack. Brush each muffin with melted butter and sprinkle with castor sugar.
Makes 12 muffins. |
