Serves: 2 Cooking time: 30 Minutes

- 2 skinless chicken breasts salt and pepper
- 2 rashers bacon, chopped 1/4 red pepper, cut into strips and chopped
- 1 round Clover Traditional Feta
- 1 roll puff pastry, unrolled and defrosted
- Peppadew™ Diced Peppers or sweet chilli sauce for serving – optional


1. Use a meat cleaver or a rolling pin and flatten the chicken breasts on a wooden board. 2. Flavour with salt and pepper. 2. Fry the chopped bacon in a heated and lightly oiled frying pan. When half cooked add the chopped red pepper and stir fry until done. Crumble in the Feta. 4. Spoon mixture down the centre of the chicken breasts. 5. Roll up the chicken breasts and secure with a tooth pick. Place in fridge for 30 minutes. 6. Heat the oven to 180ºC. Place the unrolled puff pastry on a lightly floured wooden board. Cut into 4 x 2,5 cm even strips. 7. Remove the chicken from the fridge and remove the toothpicks. Roll the pastry strips around the chicken so that the chicken breasts are completely covered with the pastry. Secure the ends by pinching the dough. 8. Place on a baking sheet and bake in a preheated oven of 180ºC for 30 minutes. 9. Serve hot topped with Peppadew™ Diced Peppers or sweet chilli sauce.
