Orange Honey Melt Cake
At 25 Lebo Letsoalo of Nelspruit was the youngest fi nalist. Presently she works as a Portfolio Executive at a bank, but she also has a passion for the catering business. She has already registered her business as Morish Cuisine cc. She plans to start a buffetstyle shop which she intends naming The Pantry, and her products will vary from traditional to more contemporary. She wants to create an atmosphere of plenty with a serving table in the middle of her shop.

This is an original recipe that I came up with to celebrate my love for oranges. They are also very plentiful in the Lowveld area and are available throughout the seasons. So this is truly a cake that represents the Lowveld area and I believe that it will have my clients coming into my coffee shop for slice after slice…

Ingredients

250 g soft Clover Mooiriver Butter
1 cup Huletts Treacle Sugar
6 tablespoons Huletts Golden Syrup zest of 1 large orange and juice
4 large free range eggs
2 cups plain flour
2 teaspoons baking powder
1 teaspoon bicarbonate of soda
2 cups Pronutro Wholewheat Honey Melt
2 cups Clover Full Cream Fresh Milk
Huletts Icing Sugar, for dusting
Orange peel, to garnish

Hint

This moist cake is delicious served with tea but can be served warm with custard and ice cream as a lovely dessert pudding.

Preperation Method

1. Cream the butter and sugar together. Mix in the syrup followed by the orange zest. Add the eggs one at a time. Sift in the flour, baking powder and bicarbonate of soda to the butter mixture. Add Pronutro (without sieving) followed by the orange juice and milk to form a smooth consistency.
2. Place batter into a greased baking dish and bake for about 60 minutes or until a toothpick comes out clean when inserted in the middle of the cake. When done, turn cake to cool on a wire rack.
3. When completely cool, dust with some icing sugar and garnish with strands of orange peel.
