1. Preheat oven to 180ºC. 2. Fry bacon in pan until crisp. Remove bacon from pan and fry mushrooms until just soft. Remove from stove. 3. Mix the mushrooms, bacon and cheese together. 4. Divide the mixture between the 6 pancakes, reserving some for decoration. 5. Roll the pancakes and place in a greased ovenproof dish. 6. Sprinkle with extra grated cheese and reserved mixture. 7. Bake for 10 minutes until cheese has melted.
