- Orange zest for decoration


1. Place the pasta rice, raisins and salt in a heavy-based saucepan. Add the hot milk, bring to the boil, reduce heat and simmer until the pasta is tender. Add the butter and mix through. 2. Beat the egg yolks and sugar together until creamy and light in colour. Add some of the hot pasta mixture to eggs and mix through. Add mixture to the remaining pasta in the saucepan. Bring to the boil; reduce heat and simmer, stirring continuously, until mixture thickens. Remove from heat, stir in the essence and allow to cool. 3. Beat the cream until soft peaks form and lightly fold into the rice mixture. 4.Serve immediately sprinkled with cinnamon sugar and decorated with orange zest. |
