Clover - Ballito Prawn Festival
 

The Ballito Prawn and Jazz Festival 8 - 10 July 2011

 

The festival boasted a variety of action packed activities for the entire family and provided a weekend full of action packed experiences! Durban chef, Shaun Smith, was doing an Elite Welsh Rarebit  demonstration (Recipe below).

Elite Welsh Rarebit

  • 60ml Clover Butter
  • 60ml Flour
  • 250ml Clover Milk
  • 3 Bay Leaves
  • 2 Garlic Cloves
  • 5ml Salt
  • 5ml Black Pepper
  • 5ml Mustard
  • 5ml Rice Wine Vinegar
  • 2ml Wasabi Powder
  • 200g Grated Elite Mature Cheddar Cheese
  • 50g Gorgonzola (optional)
  • 340ml Beer
  • French Baguette (toasted) 





1. Make a roux with the butter and flour, add the milk to make a white sauce.
2. Add the bay leaves, garlic cloves, salt, black pepper, mustard, rice wine vinegar, Wasabi powder, grated Mature cheddar & gorgonzola.
3. Whisk until smooth, add the beer and allow to thicken
4. Spoon over the sliced Baguette, sprinkle some grated cheddar over, put under the grill until golden and serve.
