- 3 rounds Clover Black Pepper Feta, crumbled
- 400g (4 x 250ml) Elite Cheddar cheese, grated
- 125g blue cheese, crumbled
- 150g moist biltong, thinly sliced
- 50ml chopped gherkin
- 3 spring onions, chopped
- 250ml mayonnaise
- 250g mascarpone
- 1 red chilli, finely chopped
- 50g (125ml) walnuts, finely chopped
- 125ml grated biltong
- 50ml chopped parsley
- sliced biltong to garnish


1. Combine feta, cheddar and blue cheese. Add biltong, gherkins, spring onions, mayonnaise, mascarpone and chilli and mix. 2. Spoon into baking tin or mould lined with cling-wrap, and place in refrigerator until firm. 3. Turn out. Sprinkle with nuts, grated biltong and parsley and garnish with biltong slices. Serve with wholewheat bread or cheese biscuits
