1. Roll out pastry and line a 26cm quiche dish (or combine crust ingredients and press in quiche dish). 2. Sauté mushroom and leeks in butter until soft and liquid has evaporated. Leave to cool. Spoon into dish. Sauté bacon in same saucepan, until almost crisp. Sprinkle bacon in quiche, followed by cheese. 3. Beat eggs and cream, season and pour over cheese. 4. Bake in pre-heated oven of 200°C for 45 minutes, or until golden brown.
