BOXING DAY BISCUITS

  • 375g Mooi River butter 
  • 125ml oil
  • 250ml Clover Crush orange juice
  • Grated zest of 1 orange
  • 200g (250ml) sugar
  • 65ml brandy
  • 480g (4 x 250 ml) bread flour
  • 195g (375ml) Nutty Wheat
  • 5ml baking powder
  • 5ml bicarbonate of soda
  • 10ml mixed spice
     
    Syrup:
  • 125ml water
  • 125 ml Clover Crush orange juice
  • 375ml honey
  • 3 cinnamon sticks
  • Rind of 1 lemon
  • Chopped walnuts to sprinkle, optional
  • Icing sugar



1. Preheat oven to 180°C.
2. Melt butter and cool.
3. Add oil and beat well. Add orange juice, orange zest, sugar and brandy and beat well. Add dry ingredients and mix thoroughly.
4. Shape into biscuits and place on greased baking tray.
5. Bake for 30- 45 minutes, or until golden brown.

For the syrup:
6. Prepare syrup by placing all the ingredients into a saucepan. Boil for four minutes. Keep warm.
7. As soon as biscuits are done, dip in warm syrup and leave to cool on wire rack.
8. Sprinkle with icing sugar and/or nuts and serve.
