All dairy starts with milk. Milk is a very complex product and a unique liquid food that can simply be described as an oil-in-water emulsion.

Simply put, all products that are manufactured from cow's milk are called dairy products.

Milk is one of mankind’s oldest, most nutritious and most essential foods and its history is as old as civilisation itself. It has been said that milk is one of the only two natural substances created solely to be foods, the other being honey.

Today’s computerised dairy farm is a far cry from those early beginnings but the base product remains the same.

Milk is a very complex product and a unique liquid food that can simply be described as an oil-in-water emulsion. The principal constituents of milk are water, fat, protein, lactose and minerals. Milk also contains important vitamins, including calcium and protein, and is probably the most valuable natural nutrient source readily available today.

What additional nutrients does milk provide besides calcium?

Milk is one of the best sources of calcium because it also provides vitamin D, which helps the body absorb calcium. Milk is an excellent source of calcium, vitamin D, riboflavin, and phosphorus and a good source of potassium, vitamin A, vitamin B12, niacin and muscle-building protein.
