| Banana Loaf with a Fig & Nut Topping |

| Ingredients |

500ml (280g) flour 10ml baking powder 1ml bicarbonate of soda 2ml salt 5 ml ground cinnamon 125g Clover Butter 250ml (200g) sugar 2 eggs 4 large, ripe bananas, mashed 125ml chopped pecan nuts 5ml vanilla essence extra chopped pecan nuts 3 dried soft figs 125ml icing sugar mixed with a little boiling water. | |

| Preparation method |
- Preheat oven to 180ºC
- Sift flour with baking powder, bicarbonate of soda, salt and cinnamon.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, beating well between additions and adding 5 ml of the flour mixture with each egg.
- Add flour mixture to creamed mixture, alternately with bananas, and beat well until smooth.
- Stir in nuts and vanilla essence.
- Pour into a loaf tin (roughly 26 x 9 x 7 cm) of which the base has been lined and lightly oiled.
- Smooth the top of the mixture with the back of a spoon that has been dipped into hot water.
- Bake for 50-60 minutes.
- Turn out, remove paper and cool.
- Spoon icing mixture over the top of the loaf.
- Sprinkle with chopped nuts and chopped figs
