| Chocolate Cake with Chocolate Fudge Icing |

Serves: Makes one cake Cooking time: 1 Hour

| Ingredients |
|
125 ml cocoa powder 250 ml boiling water 4 extra large eggs, separated 375 ml sugar 125 ml oil 5 ml vanilla essence 450 ml cake flour 15 ml baking powder 2 ml salt
Chocolate fudge icing 160 g (300ml) icing Sugar 125 ml cocoa 80 g Clover butter 100 g (120ml) castor sugar 50 ml water

| Preparation method |
- Preheat oven to 180ºC.
- Grease two 23 cm cake pans.
- Mix the cocoa powder with boiling water and leave to cool.
- Beat egg yolks while adding the sugar a little at a time.
- Beat until thick and creamy.
- Add the cocoa mixture, oil and vanilla essence and mix well.
- Sift the flour, baking powder and salt together.
- Mix into the cocoa mixture.
- Beat the egg whites until stiff and fold into mixture.
- Spoon into greased pans and bake for 25 to 30 min.
- Remove from oven and leave to cool on wire rack.
To make the chocolate fudge icing:
- Sift the icing sugar and cocoa together.
- Mix the water, Clover butter and castor sugar in a saucepan.
- Dissolve the castor sugar over low heat and bring to boil.
- After 1 minute, remove from heat and add the cocoa and icing sugar all at once.
- Beat until smooth and shiny.
- Pour over cake while still hot.
- Decorate with chocolate stars and chopped praline.
