In hot weather, low-fat or fruit yoghurts can replace or supplement sandwiches. And in chilly weather, soups in a Thermos flask can stand in for both. Combine soups with something crunchy, like these maize meal pop-ins.

400ml water 2ml salt 60g (125ml) maize meal 1x420g tin sweetcorn 125ml polony, chopped 1 onion, chopped 200g (500 ml) Elite Chedddar, grated 50ml fresh parsley, chopped 240g (500 ml) cake flour 10ml baking powder oil for deep-frying |
| Preparation method |
- Place 300 ml water and salt in saucepan and bring to the boil.
- Mix maize meal and rest of water to a paste and stir into boiling water.
- Reduce heat and simmer until cooked.
- Leave to cool slightly before adding remainder of ingredients, except oil.
- Mix well.
- Heat oil and deep-fry spoonfuls of mixture in hot oil until golden brown and done.
- Place on absorbent paper.
