Basic Scone Recipe

These are the recipes the Clover Mamas Afrika tried and tested at the Beginners Cooking & Baking course.

Ingredients

500ml cake flour OR white bread flour (280g)
15ml baking powder
90g Clover Mooi River Salted Butter
1 ex-large egg plus water to equal 175ml

Preparation method
  1. Sift dry ingredients together.
  2. Rub butter into flour until mixture resembles fine breadcrumbs
  3. Mix egg and water.
  4. Use a knife to cut in liquid, mixing just enough to moisten.
  5. Do not mix until smooth.
  6. Turn out onto a floured board and press lightly together
  7. Cut with a knife or cookie cutter
  8. Place scones on a baking tray and bake at 200ºC / 400ºF for 12 - 15 minutes.
  9. Break scones in half and serve with butter and jam, syrup or honey or serve savoury scones with cheese, fish paste etc

Scone Variations
Maas Scones - Basic Recipe
Ingredients

500ml cake flour
20ml baking powder
2ml salt
40g Clover Mooi River Salted Butter, room temperature
125ml Clover Danone Inkomazi
1 egg
60ml water


 
Preparation method
  1. Preheat oven to 240°C.
  2. Sift the flour, baking powder and salt together. Add the butter and rub into flour with fingers very lightly.
  3. Beat the egg, maas and water together. Add to dry ingredients and mix into a medium to firm dough. Turn onto a lightly floured surface and pat out to 3cm thick. Cut into rounds with a 5cm cutter.
  4. Place on a lightly greased baking tray and bake for 12-15 minutes

Add 125ml mixed dried fruit chopped or 125ml chopped dates to the basic recipe

To the basic recipe, add 60ml chopped sautéed spring onion, 125ml grated Clover Cheddar and 2ml cayenne pepper
