Macaroni and Cheese

Ingredients to serve 4

1,5 litres water
7ml salt
7ml oil
250g Macaroni
420ml chicken stock
½ x 42g packet cream of tomato soup
125ml grated Clover Cheddar cheese

Ingredients to serve 8

3 litres water (12x250ml)
15ml salt
15ml oil
500g Macaroni
840ml chicken stock
1 x 42g packet cream of tomato soup
250ml grated Clover Cheddar cheese


 
Preparation method
  1. Set the oven to 160ºC.
  2. Pour the water in a large heavy based saucepan and place it on the stove. Add salt and oil to prevent it from over boiling. Set the stove on high.
  3. When the water boils add the pasta, without a lid, for 15 minutes until the macaroni is soft. Drain in a colander pour cold water over.
  4. Mix the chicken stock and tomato soup powder well.
  5. Grease a baking dish with butter. Layer the pasta in the dish, then a layer of tomato soup mixture. Repeat until all the ingredients have been used.
  6. Sprinkle the cheese on top.
  7. Place in the oven for 20-25 minute until the cheese golden brown in colour. Do not over bake this causes dish to dry out.
  8. Serve warm with salad

Variation
Macaroni, pilchards and cheese

Add 1x425g can Pilchards in Tomato sauce. Flake fish gently with a fork and mix with the tomato soup mixture.


Variation
Macaroni, corned beef and cheese

Add 1x300g can corned beef, cut into cubes, to tomato soup mixture. Mix well and layer with macaroni.


Macaroni and beef dish
Ingredients to serve 4

250g macaroni
45ml cake flour
10ml salt
3ml paprika
pinch pepper
1kg boneless stewing beef, cut into 25mm strips
60ml sunflower oil
1 onion, finely chopped
2 cloves garlic, crushed
30ml fresh parsley chopped OR 10ml dried parsley
250ml beef stock
30ml tomato paste
100ml grated Clover Cheddar cheese

Ingredients to serve 8

500g macaroni
90ml cake flour
20ml salt
6ml paprika
2ml pepper
2kg boneless stewing beef, cut into 25mm strips
120ml sunflower oil
2 onions, finely chopped
4 cloves garlic, crushed
60ml fresh parsley chopped OR 20ml dried parsley
500ml beef stock
60ml tomato paste
200ml grated Clover Cheddar cheese


 
Preparation method
  1. Cook the pasta according to instructions on pack. Keep warm.
  2. Mix the flour, salt, paprika and pepper together in a plastic bag. Add the meat in batches and shake well to cover meat with flour.
  3. Heat the oil in a heavy-based saucepan. Add the meat in batches and fry until golden in colour. Remove meat from pan, add the onions and garlic and sauté until onion is translucent. Add the meat and remaining ingredients except cheese. Mix through and simmer for 15 minutes.
  4. Mix the macaroni into the meat and transfer to a greased ovenproof dish. Sprinkle the cheese over and bake in a preheated oven at 160°C for 30 minutes or until meat is tender and cheese golden in colour.
  5. Serve warm
