Ingredients
    • 350 ml (300 g) castor sugar
    • 1 vanilla bean, halved lengthways
    • 2 star anise seeds
    • 1 cinnamon stick
    • 5 cloves
    • 1 piece of thinly peeled orange rind
    • 125 ml Clover Krush 100% Orange Fruit Juice Blend
    • 375 ml water
    • 4 apricots, stoned and halved
    • 2 peaches, stoned and sliced
    • 2 nectarines, stoned and sliced
    • To serve
    • 500 ml NutriDay Vanilla Low Fat Yoghurt
Method

    Heat the castor sugar, vanilla, anise seeds, cinnamon stick, cloves, orange rind, orange juice and water together in a heavy-based saucepan. Bring to the boil, reduce heat and allow to simmer uncovered until reduced by 2⁄3. Add the fruit and gently poach for 5 - 7 minutes. Remove from heat and allow to stand for 10 minutes. Allow to cool slightly.

    Serve with a dollop of yoghurt.
