If using bacon, grill under a preheated oven grill until crispy.
Meanwhile, soft-poach the eggs and prepare the hollandaise sauce.
Toast the muffin halves and spread with butter.
Place 2 halves on each plate.
Place 2 strips of bacon or 1 slice of ham on each muffin half.
Place an egg on each and cover with the sauce.
Season to taste and serve immediately.
