Wash sweet potatoes and dry.
Rub with butter and place in an ovenproof dish.
Bake in a preheated oven at 200°C for 1 - 1, 5 hours or until skin is crisp and flesh is cooked.
For butter, mix all the ingredients together until smooth.
Cut open the sweet potatoes, season to taste and serve with a spoonful of sweet chilli butter on top.
