Ingredients
    • 4 large sweet potatoes
    • Clover Mooi River Butter
    • salt and freshly ground black pepper to taste
    • Sweet chilli and coriander butter
    • 30 ml fresh coriander leaves
    • 75 ml (70 g) Clover Mooi River Butter
    • 5 ml ready-made sweet chilli sauce
    • 3 cm piece ginger, grated
Method

    Wash sweet potatoes and dry.

    Rub with butter and place in an ovenproof dish.

    Bake in a preheated oven at 200°C for 1 - 1, 5 hours or until skin is crisp and flesh is cooked.

    For butter, mix all the ingredients together until smooth.

    Cut open the sweet potatoes, season to taste and serve with a spoonful of sweet chilli butter on top.
