Place the carrots in a large, heavy-based saucepan.
Add the honey and butter and just cover with water.
Bring to the boil, then reduce heat and allow to simmer until the water has evaporated and only a sticky sauce is left.
Remove the carrots from the pan and keep the sticky sauce.
Sear the carrots in a preheated griddle pan.
Brush with the sticky sauce and sprinkle with the sesame seeds.
