Heat the butter in a heavy-based saucepan.
Add the onion and garlic and sauté until the onion is translucent.
Add the mince and fry while stirring with a fork until golden brown in colour.
Add the paprika and season to taste.
Add the tomato paste and chorizo and cook for another 5 minutes.
Spoon meat mixture into the centre of 4 pancakes.
Mix the cheese, divide between the pancakes and sprinkle over the meat.
Fold pancakes over to close. Serve immediately.
