Ingredients
    • 50 ml Clover Mooi River Butter
    • 50 ml brown sugar
    • 500 g peeled and diced butternut
    • 500 g peeled and diced sweet potato
    • Good pinch each ginger, nutmeg and cinnamon
    • 3 ml salt
    • 250 ml Clover Krush Apple Juice
    • 10 - 12 very coarsely chopped pecan nuts (optional)
Method

    Place the butter, sugar, butternut and sweet potato into a heavy based shallow saucepan and stir fry over moderate heat for 8 - 10 minutes until browned.

    Add the spices, salt and juice, stir and simmer partly covered until the liquid has evaporated and turned into a sticky glaze.

    Toss in the nuts, if used, and stir and cook 1 minute more.

    Serve hot.
