Ingredients
    • 3 tbsp (45 ml) Clover Springbok Butter
    • 2 tbsp (30 ml) cake flour
    • 1½ cups (375 ml) Clover Full Cream Milk, hot
    • ¾ cup (185 ml) Clover Dairy UHT Cream
    • ½ cup (65 g) Clover Tussers Cheese, grated
    • ½ cup (65 g) Clover Gouda Cheese, grated
    • salt and black pepper
    • 400 g macaroni, cooked and drained
    • Crumb topping:
    • ⅓ cup (20 g) fresh bread crumbs
    • ¼ cup (40 g) Clover Parmesan Cheese, finely grated
    • ½ cup (65 g) Clover Tussers Cheese, finely grated
    • ½ tsp (2 ml) ground paprika
Method

    Preheat oven to 180°C and grease an ovenproof dish.

    Heat the bu tter and flour in a pan and cook for 2 - 3 minutes.

    Whisk in the hot milk and cook, stirring continuously for 3 - 4 minutes, until sauce is smooth.

    Reduce heat and stir in the cream, Tussers and Gouda cheeses, stirring until the cheeses have melted.

    Season with salt and pepper and add the macaroni, stir to coat, then transfer to the grease d baking dish.

    Toss all the crumb topping ingredients together and sprinkle over the pasta.

    Bake in the oven for 15 minutes, then place under a hot grill and cook for 2 minutes or until topping is golden and crispy.
