Maple Syrup and Cinnamon Apple Tart

Method

For the pastry:

1. Combine the margarine and castor sugar in the bowl of a food processor and process until smooth.
2. Add the egg and process until incorporated.
3. Add the flour and process again until the pastry comes together in a ball.
4. Divide the pastry into 2 equal parts, flatten each into a disc and wrap each disc with plastic wrap. Place in the fridge for 30 min.

For the filling:

1. Meanwhile, combine the margarine, maple syrup, and cinnamon sticks in a medium pan and melt over medium heat.
2. Add the apple pieces and cook until caramelised. Remove from the heat and allow to cool.
3. Remove the cinnamon sticks.

For the tart:

1. Preheat oven to 200 ̊C.
2. Grease a 23cm springform tart pan well.
3. Roll one of the pastry discs on a clean work surface, lightly dusted with flour, to a thickness of 2 mm.
4. Line the pan with the pastry, pressing down gently to form the shape of the pan.
