Clover Classic custard scones

A different take on a teatime classic. As seen on Expresso Morning Show or Afternoon Express, SABC3. Recipe by: Pumla Brook-Thomae

INGREDIENTS

  • 4 cups cake flour
  • 4 teaspoons baking powder
  • 250 g cold Clover butter (cubed)
  • ½ cup castor sugar
  • ½ teaspoon salt
  • ½ cup Clover Classic custard
  • 1/3 cup Clover Amasi
  • 2 large eggs (whisked)
  • 1 teaspoon vanilla essence

Method

  1. Preheat the oven to 180°C.
  2. Mix flour with baking powder and salt.
  3. Mix cubed butter with the flour until it resembles breadcrumbs, then add in the sugar.
  4. In a separate bowl, mix the Clover Classic custard, Amasi, eggs and vanilla essence together.
  5. Add the mixture to the flour and mix until well combined.
  6. Press the scone dough and cut into equal sizes.
  7. Brush over the egg wash and bake for 15 – 20 minutes until golden brown.
