Clover spiced monkey bread

Sweet and yummy pull-apart bread. As seen on Expresso Morning Show or Afternoon Express on SABC 3. Recipe by Nicole Snelling

INGREDIENTS

  • 500g cake flour
  • 1 ¼ cup Clover milk, lukewarm
  • 50g castor sugar
  • 1 large egg
  • 1 teaspoon ground cinnamon
  • 1 teaspoon mixed spice
  • 14g dried yeast
  • ½ teaspoon salt

    Cinnamon butter:

  • 1 teaspoon ground cinnamon
  • 1/3 cup Clover butter, melted

Method

  1. Preheat the oven to 180°C.
  2. Add the milk and the yeast together into a measuring jug and whisk to combine.
  3. Add the flour, castor sugar, cinnamon, mixed spice and salt into a mixing bowl.
  4. Add the egg to the milk mixture and whisk to combine.
  5. Combine the liquid into the dry ingredients and mix until a dough forms.
  6. Cover the bowl with cling film and allow the dough to double in size.
  7. Prepare a Bundt tin with a non-stick spray.
  8. Add the melted butter and cinnamon to a mixing bowl.
  9. Roll the dough into small golf ball sized balls and coat them in the butter mixture. Pack the balls into the tin and allow the dough to rise for 30 minutes.
  10. Bake the bread for 10 – 15 minutes until golden in colour.
  11. Decant the bread onto a serving board and place a bowl of Clover Classic custard into the center for the bread balls to be dunked into.
