Heat the milk over a medium heat until it simmers. Rinse the sago with fresh water before adding to the milk along with the cinnamon and vanilla. Combine the sugars before adding half to the mixture along with the butter.
Combine the ingredients and simmer gently until the sago pearls turn translucent.
Whisk the yolks and add to the sago mixture while continuing to stir so the eggs don’t scramble.
Add the egg whites to a clean bowl and begin beating, gradually adding the remaining sugar until stiff peaks form.
Fold the egg whites through the sago mixture before pouring into a baking dish and baking at 160’C for 45 – 50minutes. For best results bake the dish in a water bath.
Serve with chilled or heated Clover classic custard.

Use an electric mixer and beat the cream until it starts to stiffen.
Stir the condensed milk, pistachio nuts and Turkish delight into the whipped cream with a spoon.
Scoop the mixture into a suitable container with a sealable lid and put it in the freezer.
Stir after an hour, and then again after 2 hours.
Now leave it overnight in the fridge until completely set.
CHOCOLATE SAUCE
Pour the milk, condensed milk and chocolate pieces into a saucepan, and let it melt over low heat.
Remove from the stove, and let it cool.
Serve with the ice cream.
METHOD FOR THE PASTRY:
Cream the butter and sugar until light and pale in colour. Add the egg and beat until well combined. Add the remaining ingredients and mix to form stiff dough.
Press into a 20cm greased round pie dish or shallow cake tin, rounding off the edges.
Blind bake for 15minutes at 1800C, remove the blind baking beans and bake for another 5-10minutes until light brown.
Preheat the oven to 1800 Line and grease a 20×20cm square baking tin with foil.
In a large mixing bowl melt 1cup of the dark chocolate chips, the butter and milk chocolate until smooth and lump free.
In another mixing bowl beat the eggs and the sugar until thick and pale in colour about 3minutes and add the vanilla paste.
Stir in the chocolate and butter mixture. Add the flour and the salt, half of the chopped cashews and fold in until well combined.
Pour half the batter into the prepared baking tin and bake for 10 minutes and remove from the oven. Sprinkle the remaining cup of chocolate over the semi cooked base, pour over the condensed milk and top off with the remaining batter to cover the layer of condensed milk.
Return to the oven for 35 minutes or until a cake tester comes out clean. Sprinkle over the mini marshmallows, remaining nuts and drizzle with the melted chocolate.
Allow to cool before cutting into squares. Enjoy with a glass of Clover Full cream milk.
Method for the homemade Pistachio paste:
Blitz the nuts and icing sugar until fine.
Add a small amount of water and blitz until paste consistency, add more if needed.
