Preheat oven to 180°C.
Heat butter in a pan and fry the onion for 3–4 minutes over a low heat until softened.
Transfer to a mixing bowl and allow to cool.
Once cool, stir in the corn, cheese, sour cream, chilli and coriander, and season to taste with salt and pepper.
Place a pastry sheet on a flat surface.
Brush with butter.
Top with another pastry sheet.
Cut into 3 long, lengthwise strips.
Cover remaining pastry with a damp tea towel so it doesn’t dry out.
Place 1 tablespoon of the corn filling in one corner of the double layered pastry strip.
Fold over diagonally to form a triangle.
Continue folding, retaining a triangular shape until the end of the strip.
Place triangle onto a baking sheet.
Repeat with remaining pastry and filling.
Brush all over with remaining butter and sprinkle the sesame seeds over the top.
Bake for 12–15 minutes or until golden and crisp.
Heat the olive oil in a pan and fry the tomatoes and garlic for 3–4 minutes.
Add the tomato and onion mix and cook on high for 5 minutes or until the mixture has reduced and isn’t watery.
Stir in the tomato paste and basil and season with salt and pepper.
Allow to cool.
Preheat oven to 180°C. Cut the phyllo-pastry into 8cm squares and brush each piece with a little melted butter.
Place 5 slices into each of the holes of a muffin tray to form a cup shape.
Repeat with the balance of the phyllo.
Spoon the tomato mixture into the muffin cases and top with a mixture of both cheeses.
Scatter the thyme over the top and bake for 15–18 minutes or until the tartlets are golden and the cheese is melted.
Heat the butter in a pan over a moderate heat and cook the leeks and garlic for 3 minutes, until softened.
Transfer to a mixing bowl and allow to cool.
Stir in the ham, potato, flour, cheese and egg yolk.
Season well with salt and pepper and combine.
Shape into patties and chill for 30 minutes.
Coating
Place the flour, egg, and bread crumbs into three separate bowls.
Dip each patty separately into the flour, shake of the excess and then dip into the egg to coat and finally into the fresh bread crumbs.
Chill for 20 minutes before pan frying over a moderate heat for 2–3 minutes per side, until crispy and golden.
Serve with salad.
Put the ingredients, except for the bicarbonate of soda, water and oil, into a bowl and mix well.
Then stir in the bicarbonate of soda and add just enough water to make a soft dough.
Heat the oil for frying and drop spoonfuls of the chilli bite mixture into the pan and fry chilli bites for 2–3 minutes until golden brown and cooked through.
Remove and drain on a paper towel.
Serve immediately.

Then add the wine and lemon juice and simmer for 5–6 minutes.
Strain through a sieve and return the liquid to the pan.
Heat over a very low heat and add the butter, one piece at a time, whisking until you have a thickened and combined sauce.
Season well.
Cook asparagus in boiling water for 3 minutes, then drain and divide between serving plates.
Drizzle with sauce and serve with a good grind of milled black pepper.
