1 cup (200g) granulated sugar
2 tbsp lemon zest (zest of 2 lemons)
6 egg yolks
½ cup lemon juice
½ cup Clover Springbok unsalted butter, cold
ITALIAN MERINGUE
1 cup sugar
½ cup water
4 large egg whites (room temperature)
½ tsp cream of tartar (or 1 tsp lemon juice or white vinegar)
