Clover Classic Custard Mousse

Move over chocolate, there’s a new favourite mousse in town. As seen on Expresso Morning Show or Afternoon Express, SABC3. Recipe by Monicia Horne

INGREDIENTS

  • 2 cups Clover Classic custard
  • 1 cup Clover fresh cream, whipped to stiff peaks
  • 2 egg whites
  • 1 teaspoon vanilla extract
  • 2 tablespoons castor sugar
  • Fresh berries for garnish

Method

  1. In a bowl, add the Clover Classic custard and fold in the whipped cream.
  2. Chill in the fridge.
  3. In a separate bowl, mix the egg whites with a hand mixer until soft peaks form.
  4. Add the vanilla extract and gradually add the castor sugar.
  5. Beat until stiff peaks form and the mixture is slightly glossy.
  6. Remove the chilled custard cream mixture from the fridge and gently fold in the soft meringue mixture.
  7. Return the custard mousse to the fridge and allow to slightly set.
  8. Garnish with berries before serving.
