Clover Classic Rustic Honey and Yoghurt Cake

Method

1. Preheat the oven to 180˚C.
2. Spray a 20cm cake tin with non-stick cooking spray and line with baking paper.
3. In a bowl, beat butter and honey until well combined.
4. Add the eggs one by one, beating after each.
5. Add the vanilla and Clover Classic to the butter mixture and beat well.
6. In another bowl, sift together the cake flour, baking powder and salt.
7. Combine the wet and dry ingredients.
8. Place the batter into the prepared baking tin.
9. Bake the cake for 30 – 35 minutes or until a cake tester inserted in the middle of the cake comes out clean.
10. Cool in the tin for 10 minutes, then transfer to a wire rack to cool down completely.
11. While the cake is cooling down, prepare the cream cheese frosting.
12. In a mixing bowl beat butter and cream cheese until smooth and combined.
13. Add the vanilla and icing sugar – beat on low for 1 minute.
14. Add the honey and beat until light and fluffy.
