Clover Roast Pear, Walnut and Feta Mousse Tart

A deliciously sweet and savoury dish to add to your afternoon tea. As seen on Expresso Morning Show or Afternoon Express on SABC 3. Recipe by Josh Wiid

INGREDIENTS

  • 2 pears, peeled and cut into quarters
  • 1 teaspoon olive oil
  • ½ roll puff pastry, gently rolled
  • 1 egg, beaten
  • 1 red onion, finely sliced
  • 1 tablespoon butter
  • 1 teaspoon sugar
  • 1 teaspoon vinegar
  • ½ teaspoon thyme, chopped
  • 200g Clover feta cheese
  • 100ml Clover milk
  • 50g toasted walnuts, lightly crushed
  • 1 tablespoon balsamic reduction
  • Rocket to garnish

Method

  1. Preheat oven to 220°C.
  2. Drizzle olive oil over pears, season with salt and pepper and roast until golden brown.
  3. Roll pastry into a long rectangle, egg wash and score the pastry about 1cm from the edge. Bake until puffed and golden brown.
  4. While pastry is baking, sweat onion with the thyme in butter until softened.
  5. Add salt and sugar and cook for a further 10 minutes until jam like. Set aside.
  6. Place feta into a blender and slowly stream in milk to achieve a mousse. Add more milk if the mixture is too thick or struggling to blend. Place in fridge to keep firm.
  7. Spread onion jam on the base of the tart, then layer the pear pieces.
  8. Pipe feta mousse in gaps, drizzle balsamic and walnuts and garnish with rocket.
