Clover Spiced Toffee Skillet Cookie

A family-sized cookie! As seen on Expresso Morning Show or Afternoon Express on SABC 3. Recipe by Zola Nene

INGREDIENTS

Cookie

  • 85g salted butter
  • 1/3 cup brown sugar
  • ½ cup castor sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup cake flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • 60g butter toffees, roughly chopped

 

Chocolate ganache:

  • 80ml Clover full cream milk
  • 15g butter
  • 200g dark chocolate

Method

  1. Preheat the oven 180°C and grease a cast iron skillet.
  2. Cream together butter and sugars until pale and fluffy, then mix in the egg and vanilla.
  3. Mix together the flour, cinnamon, nutmeg and baking powder, then stir into the butter mixture.
  4. Fold in the toffees then transfer to the skillet.
  5. Bake for 15 – 20 minutes until the cookie is set.
  6. Heat milk and butter, then add chocolate and stir until melted.
  7. Pour over the cookie, then leave to cool before serving.
