Lamb Koftas

A great meal if you are eating low carb, or as part of a Greek mezze spread.

Makes: 10 - 12 Koftas

Preparation time: 1 hour

Cooking time: 10 – 12 minutes

INGREDIENTS

For the Koftas:

500 g lamb mince
2 (1 tablespoon) garlic cloves, crushed
¹/₄ red onion, grated
2 teaspoons ground cumin
2 teaspoons ground coriander
2 teaspoons chilli flakes
salt and black pepper to taste
Clover Olive Pride Extra Virgin Olive Oil
10 – 12 wooden skewers, soaked in water

For the yoghurt dipping sauce:

³/₄ cup Clover Classic Yoghurt Based Dairy Snack, Plain
1 fresh lemon, zest and juice
1 tablespoon fresh mint, chopped
salt and white pepper, to taste

Method

For the Koftas:

Place the mince, garlic, onion, cumin, coriander, chilli flakes, salt and pepper into a mixing bowl. Mix until all the ingredients are well combined.
Take about ¼ cup of the mince mixture and tightly wrap the mince around a wooden skewer, forming a flat sausage shape. Repeat with the remaining mince mixture.
Place them into the fridge to firm up for 30 minutes.
Meanwhile, prepare the dipping sauce.
Preheat a skillet or griddle pan to a medium-high heat. (You can also do this on a braai.)
Brush the Koftas with olive oil and place them onto the griddle pan to cook for 10 – 12 minutes, or until cooked through (firm to the touch).
Serve the Koftas warm with the dipping sauce.

For the yoghurt dipping sauce:

Place all the ingredients into a mixing bowl, season well and mix through.

TIP:

If you don’t have a lot of space to cook the Koftas, omit the skewers and grill the Koftas without them, only inserting them to serve after the Koftas have been cooked.
