No-Bake Brownies

Method

1. Line a baking tray with plastic wrap.
2. In a medium saucepan, melt the spread.
3. Once melted, remove from the heat and add the cocoa powder, icing sugar, vanilla essence and eggs.
4. Whisk until well combined.
5. Return to the heat and cook for 10 – 15 minutes stirring continuously.
6. Remove from heat, stir in the biscuits, covering the bits well with the chocolate mixture.
7. Spread the mixture out evenly in the baking tray.
8. Place in the fridge and allow to set overnight.
9. Lift the slab out of the tray using the overlapping sides of the plastic wrap, tip the slab onto a large cutting board, discard the wrap, or re-use.
10. Slice into squares and store in an airtight container until ready to serve.

TIPS:

• These brownies can be made well in advance, just store in the refrigerator in an airtight container.
• Add cherries and marshmallow bits for a Rocky Road version.
