Rocky Road Bars with White Chocolate Drizzle

INGREDIENTS

  • 300g dark chocolate, chopped
  • 120g Clover butter
  • 2 tablespoons golden syrup
  • 100g shortbread biscuits, roughly crushed
  • 2 cups popped popcorn
  • 100g mini pink and white marshmallows

 

For the drizzle:

  • ½ cup Clover milk
  • 2 tablespoons clover butter
  • 100g white chocolate, chopped

Method

  1. Place dark chocolate, butter and syrup into a glass bowl then heat gently over bain-marie until melted.
  2. In a large bowl, roughly crumble in the biscuits then mix in the popcorn and marshmallows.
  3. Pour in the melted chocolate then stir thoroughly until everything is well mixed.
  4. Press into a lined square baking dish.
  5. Heat together milk and butter, then stir in the white chocolate until melted before drizzling over the rocky road.
  6. Place into the fridge to set for 30 minutes.
  7. Remove from the tin, cut into squares and enjoy!
