Heat enough water in a heavy-based saucepan to cover the eggs.
Carefully place the eggs in the water with a spoon and cover saucepan with lid.
Reduce heat and allow to simmer.
Very soft: 3 minutes
Soft: 4 - 5 minutes
Medium: 6 - 8 minutes
Hard: 12 minutes
If eggs are placed in saucepan with water before heating, follow these cooking times:
Very soft: remove when water just starts to boil
Soft: 2 minutes
Medium: 3 minutes
Hard: 10 minutes
Don't place too many eggs in the saucepan at once. They will knock against each other, causing the shells to crack.
It is better to use eggs at room temperature. Cold eggshells are more likely to crack when immersed in boiling water.
For hard-boiled eggs, use eggs that are at least 48 hours old.
This makes the peeling of the shell easier.
