Basic health muffins recipe

Rate this recipe:
    • 500 ml (280 g) cake flour
    • 10 ml bicarbonate of soda
    • 10 ml ground cinnamon
    • 2 ml salt
    • 310 ml (250 g) soft brown sugar
    • 3 eggs, beaten
    • 250 ml (230 g) Clover Mooi River Butter, melted
    • 10 ml vanilla essence
    • 750 ml carrots, finely grated
    • 60 ml desiccated coconut
    • 250 ml dried cake fruit mix, soaked in Manhattan Ice Tea, Peach flavour
    • 125 ml (75 g) mixed nuts, chopped

    Preheat oven to 180°C.

    Sift the flour, bicarbonate of soda, cinnamon and salt together.

    Add the brown sugar and mix through.

    Beat the eggs, butter and vanilla together, add the remaining ingredients and lightly mix into the flour mixture.

    Spoon equal amounts of batter into the holes of a greased muffin pan and bake for 20 - 25 minutes or until muffins spring back when lightly pressed with a finger.

    Allow to cool slightly in pan before turning out on a wire rack.

    Serve warm with cream.
