Mix all the ingredients together in a bowl.
Shape sausage into 6 even-sized coils.
Thread coils onto 6 bamboo skewers that have been soaked in hot water for 30 minutes.
Grill the sausage over moderate coals or in a preheated oven at 180°C for 10 - 15 minutes, turning once, until cooked through and lightly charred.
Cut the sausage into large pieces and serve immediately with the mustard sauce and vegetables of choice.
